|Cooking for HNW interantional hotel guests, covers range from a minimum of 10 to 25 plus the venue is becoming increasingly busy for weddings /events and caters for an average of 70/80 guests up to the maximum of 130 in the busy summer months. Daily changing set menu offering a starter, antis pastis, main course dessert and canapes You will also be involved in giving cooking classes to the hotel guest for which you will paid extra per class The restaurant tends to offer lighter dishes such as fish and seafood offering a change from local competitors as the region is famous for its local produce: truffles, wines, cheeses and meats and renown food markets|
Working closely with the Hotel Owners, main responsibilities include:
Working within a small team ensuring the daily smooth running of the kitchen and service (dinner & weddings)
Daily menu planning in contemporary rustic Italian style incl. costing & tastings
Running service with the help of your team and additional staff during busy wedding season maintaining high food quality & service standards
Food ordering, shopping at local markets, stock and wastage control, maintaining 70% GP target
Due diligence: maintaining Food Safety & HACCP records, maintenance of kitchen & equipment
Weddings: meeting & greeting, menus and budget, tastings, etc

Ongoing seasonal contract from end of March to end of October
Stunning region of North Western Italy bordering some of the highest moutains in Europe/ nearby to both Switzerland and France.
Working 3pm to close to cover dinner service (5 to 6 nights per week) plus weddings
Start date: Feb/March 2020
This role would suit a capable Head Chef with a huge passion for cooking Italian cuisine and a background in events also with a great attitude , a chef with a good grasp of seasonal ingredients who loves to be creative and enjoys working in a small team.
A chef who has lots of energy and drive, good organisation and people skills with awareness of current food trends looking for an opportunity to live and work in stunning Italy.
