|A truly unique opportunity, for a head chef looking for an international career opportunity within a highly reputable international restaurant operator , one of the brands within the group is currently re furbishing and the concept is upmarket contemporary Italian cuisine Our client is currently seeking an EXEC head chef with relevant Italian experience, a hands on head chef with the ability to oversee the successful modernization of this concept within its 6 outlets. Refresh & relaunch a high end contemporary Italian brand exceeding guests’ expectation and raising profile of brand to a widely recognized high quality operator, targeting a larger customer count and increased spend per head
Work with the operations Director to create a modern take on a popular food style and build the brand based on present name & client goodwill
Work with Director in creating a menu of the highest standards that is modern and of the moment
You will be fully responsible for the supervision and development of the local brigade
Menu development, Menu planning, costing and recipe specification
·Establish relationships with suppliers to guarantee best produce at most competitive pricing
Work with Finance team to have accurate stock control and reporting systems while achieving targeted food costs. Constantly analyses financial reports and works with senior management to achieve greater profitability
Develops standard recipes and techniques for food preparation and presentation which help to assure consistently high quality and to minimize food costs; exercises portion control for all items served and assists in establishing menu selling prices.
To be pro-active on controlling staff costs and maintain most efficient headcount in each of the departments
Work and train team of 6 outlet head chefs and oversee training to junior chefs on new concept and provide ongoing training and mentoring.
To establish correct service procedures with front of house
To assist in training of front of house staff with regards to product knowledge & preparation
To maintain consistency and standards throughout group
To oversee and maintain health & safety standards, food hygiene standards and general site hygiene standards.
