Excellent opportunity for a sous   chef to become an integral part of this busy friendly  company  with two  existing sites and a soon to open third cafe  with imminent planned delis opening , offering breakfast and lunch with an evening offering of  simple and contemporary Italian cuisine. 



 Contemporary Italian cooking experience essential (also offering breakfast)



This Independent  Cafe/restaurant  all day dining establishment  has established an unrivalled reputation for offering a homemade Italian quality offering -  up to 100 covers 



 



7 Day Operation all day dining based on 48 hours and existing team of 5 chefs - over 5 days



Role



Supported by the head chef you will assit in all  areas of kitchen management.



Responsibilities include:



  Driven and ambitious to deliver great results



 Well versed in Italian cuisine



Passionate about great pasta, meat and fish dishes



 Able to manage a team of 8 chefs. on a busy day 5 chefs  working in a shift. 



Able to ensure that traditional English breakfasts (which our customers love) are superb quality



Able to work in all positions of the kitchen - pasta, pizza, and main course



Able to follow - and make the team follow strictly - the recipes created 



 Help the Head Chef to create an exciting weekly set lunch menu with seasonal ingredients



Help the Head Chef to change dishes on  the a la carte menu every month following the season.



Skills / Experience



The Sous Chef candidate should:



·        



 



Candidate Profile



Proven  sous  experience gained within quality /  Cafe Brasserie and / or Gastro /Delis stablishments with experience in Italian cuisine and knowledge of pizza



·Be a strong kitchen manager with culinary flair



·Well versed in UK food hygiene standards



Be disciplined with stock and labour control - experience with FnB Manager is a big plus



·Good  English and ideally with a good Italian understanding (as the brigade will include Italian members)



 



Genuine intention to offer long term commitment to next role



Salary & Benefits



£32 - 35k   Basic Start Salary  + KPI Related Bonus pa



3 Months Probationary Period: Regular Performance Related Salary Reviews

Working Hours: 45 to 50 Hrs P / Wk over 5 Days



Meals on Duty + Chef Uniform



Paid Annual Leave
