This stunning, contemporary Restaurant Cafe located in the heart of SW London is currently offering a fantastic opportunity for a highly motivated and creative Sous Chef to join their established brigade.
With modern, relaxing interiors, this trendy Eatery offers the best in simple, seasonal Brasserie cooking drawing on British & Mediterraneo influences, sourcing top quality produce from small UK suppliers.
Seating 50 and open early until late, Monday to Sunday (last orders 9.30pm); breakfast / brunch and lunch service is steady throughout the week, peaking at weekends & during winter months.
Role
Working closely with the Head Chef, you will support the Chef in all areas of kitchen management with responsibilities including:
Day to Day Running of the Kitchen – Leading a Brigade of 2 to 3 Chefs in the Head Chef’s absence
Menu Planning – A La Carte & Menu du Jour
Team Training & Development, Tastings & Briefings (Brigade of 5 chefs)
Stock Control, Supplier Liaison, Ordering, Invoices, Stock Counting, Wastage Control
Due Diligence: Hygiene, H&S Records & Cleaning Rosters
Candidate Profile
Proven Sous Chef experience gained within a small, quality Brasserie and / or Cafe Establishment with knowledge of British & Mediterranean cuisine an advantage
Strong Leadership, Communication, Organisation & Technical Skill
Genuine Passion to Cook & to be Creative
Ability to Motivate & Train team members effectively
Strong on Due Diligence – up to date on current Hygiene Legislation
Genuine intention to offer long term commitment to next role
Salary & Benefits
£22,000 – £25,000 BasicStartSalary + Possible Bonus Incentives + Discount Card (Fashion & Retail)
3 Months Probationary Period: Regular Performance Related Salary Reviews
