With kitchen garden, foraging and emphasis on showcasing the fantastic produce available in the immediate area – local farms & estates – the Restaurant attracts a discerning clientele and is also available for exclusive hire, also hosting several wedding events throughout the year.
Restaurant covers – 50 plus covers per dinner service peaking at weekends, additional Functions & Private Dining
Role
Working closely with the Head Chef, you will be integral to the continued culinary success of this award winning business.
Responsibilities include:
Day to Day Running of the Kitchen in Chef’s absence – Brigade of 8 Chefs (established & excellent retention)
Menu Planning – A La Carte & Daily Specials
Team Training & Development, Delegation – Tastings & Briefings
Stock Control, Supplier Liaison, Ordering, Invoices, Stock Auditing with Head Chef, Wastage Control
Due Diligence: Hygiene, H&S Records & Cleaning Rosters
Management Meetings
Candidate Profile
Proven Sous Chef experience gained within a comparable Business – a Boutique 4* / 5* Hotel with knowledge of Country style / British cuisine essential
Strong Communication, Organisation & Technical Skill – Good levels of Creativity
Genuine Passion to Cook with ability to deliver in busy / pressured Kitchen operation
Ability to Motivate & Train team members effectively
Strong on Due Diligence – up to date on current Hygiene Legislation
Genuine intention to offer long term commitment to next role
Salary & Benefits
£20,000 – £22,000 Basic Start Salary
3 Months Probationary Period: Regular Performance Related Salary Reviews

Accommodation: On Site – £140.00 per month (all included)
