Role
Assisting the Head Chef in all areas of Kitchen Management and leading a dedicated, established Brigade of 10 chefs in his absence, you will be responsible for creating and delivering a range of inspired, seasonal dishes with quality and consistency in mind.
Responsibilities Include:
Creative Menu Planning & Costing
Running of the Kitchen
Stock Control: Orders, Supplier Liaison, Invoices, Stock Counting, GP Margins, Wastage Control
Chef Training & Development, Briefings
Hygiene, H&S Records and Procedures, Daily / Weekly Cleaning Schedules
Catering for 70 – 120 covers for lunch and dinner
Candidate Profile
With proven Sous Chef experience gained in similar quality restaurant and / or hotel operations, you will have good knowledge of modern British cuisine and a genuine passion to cook fine food.
Demonstrating strong levels of man management, technical skill and organisation, you will have a positive and committed approach in all areas of responsibility with good experience gained on cost management / GP calculation and advantage.
You will be up to date on current Hygiene legislation.
Salary & Benefits
£35,000 Basic Start Salary pa
Excellent Working Hours: 52 Hrs PW – 4 Straight Shifts (9am – 11pm incl. breaks)
3 Months Probationary Period: Ongoing In-House Development + External Courses + Regular Performance Related Salary Reviews + Excellent Opportunities of Movement & Progression
Paid Annual Leave (Standard)
Chef Uniform + Meals on Duty
