ABOUT THE HEAD CHEF The kitchen is headed up by an accomplished and well travelled head chef  who advocates using only the finest quality local ingredients and having lived in Norfolk for more than ten years, has formed strong relationships with many local farms. This, along with his wealth of experience, ensures that he produces fresh, seasonal and flavorsome food, which is not just a meal, but an experience!



Michelin trained, he  blends modern and classic ideas; tweaking English favourites with French techniques that exude global influences from his experience cooking in Europe and the Caribbean. His nose-to-tail style means that everything is deliciously utilised with no leftover waste, creating variety in the menu.



Role



Working closely with the Head Chef, and has been described as a relaxed  mentoring Head chef you will be integral   to the continued culinary success of this award winning business.



Responsibilities include:



 Day to Day Running of the Kitchen in Chef’s absence – Brigade of 5 Chefs (established & excellent retention)



Menu Planning – A La Carte & Daily Specials



Team Training & Development, Delegation – Tastings & Briefings



Stock Control, Supplier Liaison, Ordering, Invoices, Stock Auditing with Head Chef, Wastage Control



Due Diligence: Hygiene, H&S Records & Cleaning Rosters



Management Meetings



Candidate Profile



Proven Sous Chef experience gained within a comparable Business – a High end Gastro/Restaurant  with     



knowledge of British /French cuisine essential



 Strong Communication, Organisation & Technical Skill – Good levels of Creativity



 Genuine Passion to Cook with ability to deliver in busy  Kitchen operation



 Ability to Motivate & Train team members effectively



Strong on Due Diligence – up to date on current Hygiene Legislation



Genuine intention to offer long term commitment to next role



Salary & Benefits



£25 - 31 k  Basic Salary plus  ( accommodation available)



3 Months Probationary Period: Regular Performance Related Salary Reviews

Working Hours: 50 Hrs P/Wk over 5 Days
