Excellent relocation opportunity  to Scotland for a head  chef to become an integral part of this exciting opening - Contemporary Italian  delis/restaurant , offering breakfast and lunch with an evening offering of  simple and contemporary Italian cuisine.



There will be one central kitchen to produce the food for the 90 seater restaurant and 36 seater delis 



All food to be produced fresh on site to include bread, fresh pastas, sauces pizzas offering seasonality and excellent consistency to the local area, an affluent neighbourhood  10 mins from  central Glasgow 



This Independent restaurant is currently undergoing an  extensive refurbishment with excellent ongoing  investment from the owner,  they are looking to establish  an unrivalled reputation for offering a homemade Italian quality offering 



Role requirements



Training and recruitment of opening team



Menu Planning /creation/ costing/– seasonal, sourcing, quality, flavours, presentation and catering for specific dietary requirements 



Stock Control: ordering, supplier liaison (new & existing), stock counting, wastage control



Due Diligence: Hygiene, H&S procedures & records, cleaning rosters



Implementation of SOP kitchen manuals



Candidate Profile



Proven experience as head chef or several years as a number two within a renown Italian Dining busy volume  operation , delis experience also an advantage.




  • Exceptional proven ability of kitchen management


  • Ability in dividing responsibilities and monitoring progress


  • Outstanding communication and leadership skills


  • Must have a stable work history and be wanting to commit to a long term role



Up-to-date with culinary trends and optimised kitchen processes Opportunity 



 



Benefits



·         A competitive salary of £40 -45 k  per annum.



·         Support provided by the owner to secure accommodation in the local area



Notes



·         The role is permanent and full time - Weekend work will be part of this role ·         The restaurant will be open 7 days a week
