Company Profile

Newly opened restaurant in a charming location focusing on the highest quality ingredients from Britain and Italy is looking for a new senior chef to join there expanding team with a frequently changing menu to reflect a determination to use only seasonal produce. A well chosen wine list along with friendly and professional service concentrating on providing a truly memorable dining experience.

Role

  • An integral member of the senior team
  • Working in partnership with the Owner/Manager
  • Responsible for a full brigade of 5 Chefs
  • Ordering and liaising with suppliers
  • Strict stock and wastage management
  • Maintaining tight G.P targets
  • Recruitment, training and motivation of kitchen staff at every level
  • Rota management
  • Lead, motivate and mentor every member of the kitchen brigade
  • Almost full autonomy over the menu
  • Implementing health and safety program through COSHH and HACCP
  • Working to budgets and targets as well as business forecasting

Candidate Profile

  • At least 2 year’s experience as either a Senior Sous Chef or Head Chef
  • A proven history in an established, professional kitchen
  • A natural, creative flair with fresh, seasonal ingredients
  • Excellent administration and financial (wastage) skills
  • A proven history and appreciation of traditional and modern Italian cuisine and techniques
  • A strong, natural leader and mentor
  • A flexible and professional approach to the role is essential
  • The ability to remain calm when the going gets tough

Salary & Benefits

£18,000 - £22,000 basic annual salary with
