This established, multi award winning Restaurant Brasserie & Bar is a firm favourite within the West London area.
Featuring open plan Dining Rooms, Cocktail Bar, Terrace & Well Equipped Kitchen, menus offer inspired, high end Brasserie dishes utilizing predominately Organic & Free Range Ingredients from around the UK.
Open from early to late, 7 days per week – seasonal Brunch, Lunch & Dinner menus – this vibrant eatery attracts busy custom on a daily basis (peaking in summer months).
Covers: 150 – 400 plus covers per day
Role
Working closely with the Owner & General Manager on site, responsibilities will include all areas of kitchen management:
Menu Design & Development – Costings & Spec Sheets
Daily running of the kitchen – team direction & delegation (4 – 6 chefs on duty)
Stock control: supplier liaison, purchasing, invoices, weekly stock audits, GP figure reporting & & wastage control
Chef recruitment, training & development, rosters & time sheets, personnel files
Due Diligence: Hygiene Records & Procedures, Cleaning Rosters
Staff & Management meetings & involvement in Marketing
Candidate Profile
Proven Head Chef experience gained within a comparable business – quality casual dining Restaurant / Brasserie with knowledge of British & Mediterranean cuisine an essential
Strong Leadership, Creative, Organisation, Communication & Technical Skill
Genuine Passion to Cook with ability to deliver high volume covers under pressure
Strong on Due Diligence – up to date on current Hygiene Legislation
Genuine intention to offer long term commitment to next role
Salary & Benefits
£40,000 – £45,000 Basic Start Salary + Excellent Bonus Incentives (P&L related)
3 Months Probationary Period:Regular Performance Related Salary Reviews

Working Hours:50 – 55 Hrs P/Wk over 5 Days (7 Shifts)
Meals on Duty + Chef Uniform
