This Historical 14th Century Country Club situated within 200 acres of Hertfordshire Parkland is currently offering a fantastic opportunity for a highly motivated and experienced Head Chef to head their Kitchen Operation.
Facilities including Fine Dining Restaurant & Brasserie, Banqueting Suite, Function & Meeting Rooms, Club House, Garden Bar, Indoor/Outdoor Swimming Pools, 18 Hole Golf Course, Tennis Courts & Games Room.

Role
Working closely with Heads of Department, you will play an integral part in the continued Culinary Success of this exclusive Country Club.
Responsibilities:
Menu Design & Development (Costing) - Emphasis on Utilising Local Producers & Suppliers
Daily Kitchen Management & Team Direction (Brigade of 5 Chefs)
Stock & Wastage Control, Purchasing, Auditing, Figure Reporting (Budgets, Gross Profit)
Rotas, Recruitment, Training & Development, Appraisals, Disciplinaries
Hygiene, H&S Records
Business Meeting
Particular Focus on Developing Events Business

Candidate Profile
Proven Head Chef Experience within a Comparable Establishment including Restaurant & Busy Events/Hospitality Business
Professional Training or Culinary Degree
Skills Set: Creative Menu Planner, Leadership & Man Management, Organisation, Multi-Tasking, Finance Acumen
Ability to Work Under Pressure & On Own Initiative
Strong on Due Diligence, you will be up to date with current Hygiene and Health & Safety Legislation
Salary & Benefits
£30,000 - £35,000 Basic Start Salary + Excellent Bonus Incentives (Performance Related)
3 Months Probationary Period: Regular Performance Related Salary Reviews
Working Hours: Approx. 50 - 55 Hrs P/Wk (5 Days - 7 Day Operation)
