Synonymous with great British food, fine ales and wines, this progressive Company has a committed approach to offering exciting, seasonal Menus sourcing only the finest ingredients from quality, local producers and suppliers.
Head Chef Role
Working closely with the General Manager, you will play an integral part in the continued Culinary Success of this Established Gastro Pub currently achieving £15,000 to £18,000 Food Sales per week.
Responsibilities include:
Menu Planning, Costing & Specification for the Dining Room, Bar & Additional Private Functions
Overseeing Daily Kitchen Operations, Leading & Directing a Brigade of 7 Chefs
Ensuring Consistently High Levels of Food Quality, Team Performance & Standards of Service
Stock Control, Sourcing & Liaising with Quality Suppliers, Purchasing, Auditing (GP Margins), Wastage Control
Rotas, Recruitment, Training & Development, Performance Reviews
Hygiene, Health & Safety Records, Cleaning Rosters
General Bookkeeping, Administration & Accounting·Management Meetings

Ideal Candidate
With proven Head Chef experience gained within Award Winning/Quality Restaurant Brasseries and/or Gastro Pubs, you will have excellent all round skills with a creative approach to menu planning and a real passion to cook great food.
Able to lead a team effectively, you will have a ‘hands on’ management style and enjoy taking ownership of your kitchen.
You will have excellent knowledge of traditional/modern British cuisine with emphasis on developing exciting meat, game and fish dishes.
Strong on Due Diligence & Up to Date on Current Hygiene Legislation
Salary & Benefits
£33,000 Basic Start Salary + £4,000 Performance Related Bonus (Paid Quarterly) pa
46 Hours Per Week: 3 Split & 2 Straight Shifts (Last Orders: 10.00pm Mon - Sat, 9.00pm Sun)
3 Months Probationary Period: Regular Performance Related Salary Reviews
