Role Modify, on a regular basis, the wine menu in conjunction with the Owner and Restaurant Managers. • Identifies and purchases wines for the Group. • Monitors the conditions of the wine cellar, ensuring optimal storage. • Works with the kitchen staff to develop food and wine pairings. • Relies on extensive experience and judgment to plan and accomplish goals. • Performs a variety of complicated tasks. • Leads and directs the work of others. • Be part of the wider serving FOH team, serving food at tables when required. • Providing in-house training on a regular basis to Group staff Candidate Profile Proven sommelier background in comparable, fine dining restaurant operations Open minded and keen to embark on a new challenge within a new and exciting environment Require an associate's degree or its equivalent (WSET DIPLOMA) and at least 3 years of experience in the field or in a related area. Our operators are true entrepreneurs who manage large teams and multi-dimensional operations a recognized international brand with multiple sites worldwide that encompass fresh, made from scratch ingredients, iconic bars, live music, phenomenal events, and rocking retail operations. Role Training and Development Must be a natural leader Maintaining consistency of food within this 22 million pound operation encompassing food and beverage and retail Covers averaging 700 – 1300 per day Maintaining a healthy, fun and productive working environment Must be a natural born leader and trainer with large scale food production experience Responsible for the completion of all necessary administrative duties Highly organized and able to manage a team of 70 chefs ( 40 in kitchen over 2 kitchens to include 1 prep ) Recruitment, training and development of your team Strong on Due Diligence, you will also be up to date on current Hygiene Legislation Candidate Profile Will have proven history as an Executive chef within volume based recognized brands A fast paced casual dining background is required Will demonstrate excellent training and development skills Hands on aptitude Motivating and mentoring Must maintain professionalism under pressure Excellent communication and organisational skills Will have a strong personality and a passion for delivering great food.
