Chef de partie Role
The responsibilities of a Chef de partie are to work as a productive member of the team cooking and presenting a range of dishes and the ability to run a section whether it be sauce, meat, fish, larder, starters or veg.
..: The Chef de Partie could be assisted by commis and/or trainee chefs depending on how the kitchen is structured
..: Will be partly responsible for monitoring portion and wastage control
..: Must at all times adhere to hygiene and health and safety standards
..: Will report to either the sous or Head chef on duty and will also be involved dependent on the establishment in the development of new dishes and menu development
A Chef de partie salary would be in the region of £19 - 24k plus dependent on size of establishment.
