The planned opening will be in March 24 and the operators (with other successful hospitality operations) are offering an exciting opportunity for a driven head chef with experience in reputable London Mexican - Japanese fusion cuisine to input their creative ideas and work together with the owners for an exciting new launch.

Role Details:

The operators currently have two other sites and this will be their second Mexican dining operation, they are seeking to upscale the cuisine from their existing site to Mexican /Japanese Fusion. 

There will be a seating capacity of 110 pax within this modern industrial space with a semis open planned kitchen. 

The opening hours will be 4pm until 11pm - Monday to Friday  and 12pm until 11pm Saturday and Sunday. 

 

  • Working with the operators in menu creation, overseeing this exciting high profile opening 
  • Creating new dishes
  • Responsibility for the daily Smooth Running of the Kitchen  
  • Menu Planning – costing & recipe specification Stock Control: Supplier Liaison, Ordering, Invoices, Stock Counting, Wastage Control Kitchen Rotas, Recruitment, Team Training & Development, Personnel Files, Maintaining GP Due Diligence: Food Hygiene, H&S Records & Cleaning Rosters Recruitment.




About You

You will have experience in a comparable in Mexican /Japanese fusion environments, preferably with opening experience 

Up to date on current culinary trends, menu planning. 

Ability to Motivate & Train team members effectively, ‘hands on’ management style.

Strong Leadership, Communication, Organisation & Technical and cost control skills.

Excellent attention to detail and a committed, motivated, flexible working approach.


A calm demeanor and lead by example mind set.


Salary & Benefits:

£55- 70k (experience dependent)
