A fantastic opportunity is available for an experienced and skilled Head Chef to oversee the culinary team at a highly acclaimed Japanese restaurant, located in a stunning market town with excellent schools - Hampshire You will have experience of Omakase, Kaiser, Edomae and Sushi-Kappo and be able to seamlessly integrate different styles into both and Omakase and A la carte offerings. As the Head Chef, you will be responsible for creating exceptional Omakase dining experiences that exceed guests' expectations while ensuring that the kitchen operates efficiently and effectively in delivering separate a la carte and set menus.

Role Details:

Role Responsibilities:

1. Culinary Leadership: Provide culinary leadership to the kitchen team, creating a culture of excellence, precision, and teamwork that delivers an unforgettable dining experience. Work collaboratively with the executive team to achieve the restaurant's culinary and financial goals.

2. Menu Creation and Execution: Design and execute an innovative and exquisite Omakase menu that showcases the finest seasonal ingredients, traditional and modern techniques, and demonstrates mastery of Omakase cuisine - combining British and Japanese ingredients with Japanese techniques and recipes. Oversee the preparation and presentation of each Omakase course, ensuring exceptional taste, texture, and visual appeal that exceed guests' expectations.

3. Kitchen Operations: with support from Sous Chefs and kitchen team, manage all aspects of kitchen operations, including inventory management, cost control, equipment maintenance, and compliance with food safety and sanitation standards. Ensure that the kitchen operates efficiently and effectively, adhering to timelines and budgets.

4.Team Development: Recruit, train, and mentor kitchen staff, fostering a culture of excellence, precision, and teamwork. Provide guidance and support to help them refine their skills and reach their full potential.

5. Collaborative Approach: Collaborate closely with the restaurant management team, including the sommelier and front-of-house staff, to create a seamless and harmonious dining experience that complements the Omakase and a la carte journey.

6. Pursuit of Excellence: Constantly explore new ingredients, techniques, and culinary trends to refine the Omakase experience, showcasing your talent and pushing the boundaries of excellence.

7. Quality Assurance: Ensure the highest standards of taste, presentation, and quality are consistently achieved and maintained throughout the Omakase experience.

8. Budgeting and Cost Control: Develop and manage the culinary budget, monitor expenses, and implement cost-saving measures without compromising the quality of ingredients or the dining experience.

9. Health and Safety: Maintain strict adherence to health, safety, and sanitation regulations to ensure a clean and safe working environment for the kitchen team.

10. Availability: Flexibility to work evenings, 

Salary and Benefits 

£45,000 per annum plus service charge (estimate £10,000 per annum gross)

Other benefits(accommodation, travel expense coverage and others)

Can be negotiated depending on suitability of candidate.

Duty hours & weekly day off

5 day working week, split shifts.
